Best Kids Lunch Packing Hack EVER - frozen sandwiches! Ridiculously simple and mind-blowing at the same time?!! This new-to-me idea has made my mornings so much easier. I just prepare a few different sandwiches ahead of time, pop them in the freezer and on those mornings where I don’t have leftovers or another lunch prepped, I just pop a frozen sandwich in my daughter’s lunch box in the morning and it’s ready to eat by the time lunch rolls around.
The possibilities are endless … you can go as fancy (turkey, cranberry & brie / chicken & pesto) or as basic (ham & cheese, PB&J) as you want. I tend to stick with basics.
• Ham & Cheese on Hawaiian Rolls
These are great to make in bulk because of the way Hawaiian rolls are packaged. You can cut the entire block down the center, layer your ingredients, then cut them up into single sammies!
• Peanut Butter & Jelly
Pro tip: spread peanut butter on both sides of the bread, then sandwich the jelly in-between to prevent the bread from getting soggy!
• Sloppy Joes
These could technically count as left-overs if you plan your night right! Next time you make sloppy joes, make extra of the filling, assemble some sandwiches, and freeze for an easy and delicious lunch surprise.
• Chicken and Pesto
Is there a tastier possible combination? Whether it's homemade or, even easier, a jug of Costco pesto, this sandwich is packed with flavor and a boost of protein goodness.
• Turkey, Cranberry and Brie
For those fancier meal-prep nights, this combination makes a delicious, juicy meal-prep lunch. Count us in for this one 🙋🏽♀️
• Egg and Cheese "Breakfast" Sandwiches
I don't know about you, but I think breakfast for lunch is always a good idea. Whether your kids eat this first thing when they get to school or wait until lunch break, these are a great option for a meal prep frozen sandwich.
• Grilled Cheese
A classic grilled cheese can be frozen and reheated the morning of for a fresh, hot sandwich in half the time.
