Slow Cooker Split Pea Soup

Soup in Bowl

I really love using the crockpot to make meals... especially for busy days and cold, winter nights.  One of my favorites is split pea soup.  Super easy to make - you just throw all the ingredients into the crockpot in the morning and voila, by the time you come home in the evening, you have a hot bowl of soup waiting.

• 1 pound dry split peas, rinsed
• 1 large yellow onion, diced
• 2 medium celery stalks, diced
• 2 medium carrots, chopped
• 3 cloves of garlic, minced
• 1 meaty smoked ham hock
• 2 parsley sprigs
• 2 bay leaves
• 32 oz of chicken or vegetable broth
• 2 cups water
• Sea Salt
• Freshly ground black pepper

 All Ingredients in the Crockpot

  • Place rinsed split peas in slow cooker.  Add onion, celery, carrots, garlic, parsley, and bay leaf over the peas.  Place ham hocks on top of the vegetables.
Saute the onions and garlic with olive oil until onions are translucent. Then add the carrots and celery and cook for about 10 minutes then add the mix to the crock pot.
  • Add chicken broth and water to the crock pot.  Add pinch of salt and pepper.
  • Cook on LOW for 7 - 8 hours or HIGH for 4 - 5 hours.
  • Remove bay leaves before serving.

Soup to go in DINE

We usually will eat this with some warm, buttery loaf of french bread and whatever we have for leftovers can be used for lunch the next day for the kids.
